The Valtellina prosciutto

A Prosciutto Crudo of the century-old tradition from Valtellina, the “fiocchetto” is obtained from two cuts of the pork leg, specifically from the sirloin tip and the rump, and is prepared through a slow seasoning with salt, pepper and spices, which lasts 15 days, and an equally slow aging that will give the product its typical roundish shape and the characteristic aroma of Valtellina.
